Bologna Restaurants & Catering — Where every gathering feels like family. Planning a celebration, business event, or special dinner at Bologna? We’re so glad you’re here! Below you’ll find answers to our most common banquet and group dining questions. This information helps you plan ahead before receiving your official event agreement.

 Booking & Payments

How do I reserve my date?

To hold your date, we require a $10 per person booking fee. This fee acts as a deposit and will be applied toward your final bill once your event takes place.

What’s included in my final total?

All events are subject to a 6% sales tax, 20% gratuity (or $100 per server, whichever is greater), and a 2.5% credit card fee. (The credit card fee is waived if paying by cash or check.)

Do I need a credit card on file?

Yes — a credit card is required to confirm your reservation, even if you choose a different form of payment for your final bill.

Can we split the bill?

We understand that some hosts prefer to share the cost. While a single payment is simplest, we can accommodate requests in advance to: Evenly split the bill between two or three cards, or Separate charges by category (for example, food on one card, beverages on another). Please let your banquet coordinator know ahead of time if you’d like to arrange this.

Is there a banquet room minimum?

Yes — our private dining spaces have minimum spending requirements (before tax, gratuity, and fees): Monday–Thursday: $1,500 minimum Friday–Sunday: $2,000 minimum If the minimum isn’t met, the difference is applied as a Room Fee. During select dates and peak times, banquet minimums may be double the standard amount. Your banquet coordinator will review any premium dates when booking.

⏰ Event Timing & Setup

How much time do we have for our event?

Semi-private parties (12+ guests): 2½ hours total (including setup and cleanup) Private events: 3½ hours total (including setup and cleanup)

Need more time?

Extended time may be available depending on our schedule. Please request this when booking — additional fees may apply.

Can we come early to decorate?

We love when guests add their personal touch! Early access for setup is possible depending on other events that day. Your banquet manager will confirm when the room is available. If you’d like staff assistance with setup, just let us know in advance — additional labor charges may apply.

‍ Staffing & Service

How many servers will be working our event?

We staff approximately one server per 12–18 guests to ensure warm, attentive service.

Do you provide linens and menus?

Linen tablecloths and napkins are available for an additional charge. We do not print menus, but you’re welcome to bring your own if desired.

When should we finalize our details?

Final menu selections and event details are due two weeks before your event. Final guaranteed guest count is due seven (7) business days prior. Billing will be based on your guaranteed or actual count — whichever is higher.

 Desserts

Can we bring our own dessert?

Absolutely — as long as it’s from a licensed commercial bakery and you provide a receipt. A $25 dessert service fee (or $1 per person, whichever is greater) applies. Homemade desserts are not permitted due to health regulations.

 Beverage & Bar Service

Can we bring our own alcohol?

For everyone’s safety and in compliance with state law, all alcoholic beverages must be purchased and served through Bologna. No outside alcohol is permitted.

Who serves the drinks?

All bar service is provided by our TIPS-certified Bologna team.

Are there any alcohol restrictions?

Yes — we proudly maintain a safe and enjoyable environment: No shots, doubles, or neat pours One drink per person at a time Valid government-issued ID required Bologna reserves the right to refuse service to anyone appearing intoxicated, underage, or disruptive. In rare cases, we may end alcohol service to maintain safety and compliance.

 Decor & Entertainment

Can we decorate the space?

Of course! We just ask that: Nothing is attached to walls, ceilings, or floors Confetti, glitter, and sparklers are not used (a $100 cleanup fee applies if confetti is used)

Can we bring music or entertainment?

Yes — musicians and DJs are welcome, as long as all entertainment follows local noise ordinances and fire codes.

What if something is lost or left behind?

What if we need to cancel?

Life happens — we understand. Semi-private reservations: The deposit is refundable with at least 7 business days’ written notice. Private events: The deposit is non-refundable unless canceled 14 business days in advance and the date is rebooked at Bologna’s discretion. All cancellations must be confirmed in writing by Bologna to be valid.

What are the host’s responsibilities?

As the event host, you are responsible for: The behavior of your guests and any outside vendors Any damages to Bologna property or furnishings Following all food and alcohol policies Paying the final invoice based on your guaranteed or actual guest count (whichever is higher) Final payment is due the day of your event, unless other arrangements are made in writing.

Want grilled sausage or burgers? We bring the grill, setup in a safe place in the driveway or yard, supply the buns, condiments, etc. Add $17.00/pp $250.00 setup fee.

All food is prepared in a special method for reheating so it’s super fresh and delicious tastings the next day. Make sure to preheat your oven and let food rest 5-10 minutes on the counter to take the refrigerator chill out before you continue to reheat. Room temperature foods heat more evenly. Times may vary by the size of your pan. Use these instructions as a guide. To keep moisture in food remember a lower temp oven and longer reheat time is always better than a hotter oven for less time.

Entrees

Chicken Piccata, Marsala

Preheat convection oven to 400*F. reheat time 25-35 minutes or internal temp reaches 165*F • Step one: remove aluminum lid and place in PREHEATED oven for 20-25 minutes • Step two: flip chicken, pour sauce over and let warm for 5-10 more minutes (or heat sauce on low on stove and pour over top)

Chicken Parmesan

Preheat oven to 400ºF. reheat time 23-25 minutes or internal temp reaches 165*F • Add 1 tbls water to the small aluminum pan (2 tbls water if full pan). • Reheat with lid on for 15 minutes • Remove lid and finish baking for 8-10 more minutes or cheese is melted to your liking

Chicken Francese, Traverse City and Siciliano*

Preheat convection oven to 400*f. Reheat time 25-35 minutes or internal temp reaches 165*f • Step one: remove aluminum lid and place in preheated oven for 20 minutes • Step two: flip chicken, pour sauce* and let warm for 5-10 more minutes. *do not add ammoglio sauce to siciliano. Ammoglio is best at room temp poured overthe chicken just before you eat it.

Roasted Potato, Smashed Potato

Preheat convection oven to 375*F. reheat time 35-40 minutes or internal temp reaches 165*F. Long and slow reheat method works best not to dry the potatoes • Place in an oven safe baking dish, drizzle with 1/4 cup heavy cream (or milk or water) and top with 4 tbls *butter cubes (*optional), COVER with lid and foil or double aluminum foil. Place in a preheated oven for 35-40 minutes or until steamy hot.

Meat Balls, Italian Sausage

Preheat convection oven to 375*F. reheat time 35-45 minutes or internal temp reaches 165*F • Step one: place in PREHEATED oven for 25 minutes • Step two: remove lid, stir and put back in oven for 10-15 more minutes without lid

Green Bean

Preheat convection oven to 350*F. reheat time 20-25 minutes or internal temp reaches 165*F • Reheat with lid on for 20-25 minutes.

Mac & Cheese

Preheat convection oven to 375*F. reheat time 40-45 minutes or internal temp reaches 165*F • Drizzle with 2 tbls heavy cream (or milk or water), COVER with lid and place aluminum pan in preheated oven for 35 minutes • Remove lid, continue to bake for 5-10 more minutes until cheese is melted to your liking • Optional, water bath method. put the baking dish in a water bath and then follow the above instructions so not to scorch or burn the pasta. It’s how I would reheat it!

Casalinga

● Preheat oven to 375ºF. cooking time 35-40 minutes ● Pour cold tomato basil sauce on top, sprinkle with grated mozzarella ● Bake with lid on for 25 minutes. (optional: bake in a water bath for an extra special no burn cooking method). ● Remove lid and finish baking for 10-15 minutes to crisp the top to your liking and the internal temperature reaches 160ºF.

Salmon, Sea Bass, Calamari

● Preheat oven to 275ºF. cooking time 11-15 minutes ● Put in a preheated oven. Warm for 11-15 minutes without lid on, until the internal temperature reaches 125 to 130 F. (heat sauce on stove and pour over top when fish is ready)

Pizza Kits

Take & Bake Pizza Kits

● Remove dough ball from pizza kit box or refrigerator and bring to rest at room temperature for one hour before baking, until ready to roll and stretch. freeze if not using within 24 hrs ● Preheat oven to 450ºF and grease your baking (sheet or stone) pan with oil or cooking spray ● Remove dough ball from plastic bag and flour generously. Begin to stretch - punch down, use a rolling pin, pull edges with both hands gently, turning often, until your pie is either 8-10” (small) or 16-18” (large). Have fun! It takes years to make a perfect circle! GF dough is parbaked (skip this step). ● Place stretched dough (or par baked GF) on the pan and add your toppings. Joe Bologna recommends putting the sauce first, then 80% of the cheese, next the toppings, and finish with more cheese, but you can be creative! ● Bake at 450ºF, check after 10 minutes, may want to turn once and check the bottom using a spatula to lift a corner making sure it doesn’t underbake or overbake. Check again after 5 minutes. Cooking time varies: Small 12-18 minutes, GF 5-10 minutes, Large 15-25 minutes ● Remove from the oven, let pizza cool for a few minutes before cutting. Enjoy!
